Heat oil in a sauté pan over medium-low until oil shimmers.
Add chicken, Cook, without moving, for 10 minutes or until golden brown.
(the chicken should easily releases from pan)
Turn chicken; cook 6 minutes or until a thermometer inserted into the center of breast registers 155°F. Remove from pan and let chicken stand for 3 minutes
Slice chicken into cubes
For the sauce:
Sauté garlic for 30 seconds, Meanwhile, in a small bowl combine orange juice, honey, soy sauce, rice wine vinegar, ginger & Sambal; add to the pan with garlic.
Let the sauce come to a boil, then stir Corn starch dissolved in water and boil for an additional minute or two until thickened. Stir in mango. Remove from heat and serve cauliflower rice and steamed broccoli.
