  • 1/2cup finely chopped onion
  • 1/4cup minced fresh cilantro
  • 2 garlic clovesminced
  • 1 jalapeno pepperfinely chopped, use more if you like it spicy
  • 1teaspoon ground cumin
  • 1teaspoon paprika
  • 3/4teaspoon kosher salt
  • 1/4teaspoon freshly ground pepper
  • 1pound ground chickenI like to use chicken breast and grind it myself in the blender
  • 3 Bell pepperscut in half
  • Optional toppings: sliced cheese sliced red onion, lettuce leaves, salsa, guacamole, sliced avocado, sliced tomato
  1. Preheat oven to 400°.
  2. In a large bowl, combine the first eight ingredients. Add chicken; mix lightly but thoroughly.
  3. Place peppers cut side-up in a baking dish. Spoon chicken mixture evenly into each pepper.
  4. Bake for 45 minute or until cooking thermometer registers 165°.
  5. If using cheese, remove from oven and broil for about 1 minute until melted. Serve with additional toppings as desired.
