Ingredients

finely chopped onion

minced fresh cilantro

jalapeno pepper
finely chopped, use more if you like it spicy

ground cumin

paprika

freshly ground pepper

ground chicken
I like to use chicken breast and grind it myself in the blender

Bell peppers
cut in half
Optional toppings: sliced cheese sliced red onion, lettuce leaves, salsa, guacamole, sliced avocado, sliced tomato
Instructions
Preheat oven to 400°.
In a large bowl, combine the first eight ingredients. Add chicken; mix lightly but thoroughly.
Place peppers cut side-up in a baking dish. Spoon chicken mixture evenly into each pepper.
Bake for 45 minute or until cooking thermometer registers 165°.
If using cheese, remove from oven and broil for about 1 minute until melted. Serve with additional toppings as desired.
