I’m going to be honest, the idea for this recipe started off as me wanting to make a chicken burger without using a bun. The results were pretty awesome.

Ingredients
- 1/2 cup finely chopped onion
- 1/4 cup minced fresh cilantro
- 2 garlic cloves minced
- 1 jalapeno pepper finely chopped, use more if you like it spicy
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1 pound ground chicken I like to use chicken breast and grind it myself in the blender
- 3 Bell peppers cut in half
- Optional toppings: sliced cheese sliced red onion, lettuce leaves, salsa, guacamole, sliced avocado, sliced tomato

Instructions
- Preheat oven to 400°.
- In a large bowl, combine the first eight ingredients. Add chicken; mix lightly but thoroughly.
- Place peppers cut side-up in a baking dish. Spoon chicken mixture evenly into each pepper.
- Bake for 45 minute or until cooking thermometer registers 165°.
- If using cheese, remove from oven and broil for about 1 minute until melted. Serve with additional toppings as desired.
