Through trial and error, I finally figured it out!
The secret to making crispy buffalo wings in the oven is baking powder. I was skeptical of this at first too but coating the chicken wings in baking powder and seasonings will help the skin crisp up nicely. Please note you cannot use baking soda as a sub.
The second secret to crispy wings is using an air fryer baking pan or baking them on a rack, this is because it allows the fat to drip off making the wings crispy on both sides.
